Toshi BrownCo-owner of Sierra Oak Estates

If you’ve ever visited our tasting room, then you can’t miss the cute little lady behind the bar - Toshi Brown. Toshi is Jim’s wife and co-owner of Sierra Oaks Estates. For those who’ve met her and had the pleasure to enjoy her scrumptious food, then this section is for you.

After many requests for Toshi’s recipes, we’ve decided to include the most popular here. If you didn’t find the recipe you are looking for, please email Toshi. And of course, we’ve also included Jim’s wine pairing suggestion for you to enjoy with the dish. May you eat with joy and drink with cheer.

Toshi's Recipes:

Noodle Mix:
2 tablespoons of salad oil
1 pkg Oriental soup noodles (Top Ramen or similar, don’t use seasoning)
1/2 cup chopped nuts (pecans or walnuts)
2 tablespoons sesame seeds

Heat oil in skillet. Crumble noodles into oil; add sesame seeds, nuts and brown.

Salad Mix:
1 medium cabbage chopped
1/2 cup green onions chopped
1/2 teaspoon salt

Mix cabbage, onions, and salt and add Noodle mix

Dressing:
1/3 cup salad oil
1/3 cup sugar
1/3 cup wine vinegar
1/2 teaspoon pepper

Mix dressing ingredients and pour over salad/noodle mix and serve
(Jim thinks it is better the 2nd day)

Jim's Wine Pairing Suggestion:
For a light meal added a few chicken strips and enjoy with a glass of Rose or SOE Red.
A great and unique way to serve left over pumpkin soup and turkey.

Ingredients:

Janet’s wonderful pumpkin soup
Left over turkey
Potatoes
Onion
Olive oil
Salt and pepper
Green onion or parsley

Directions:

This is a stew and the amounts will depend on how much soup you had left and what you want. Use your imagination and add whatever sounds good. Toshi did the following and it was very good and hearty.

1) Cut turkey into bite size pieces
2) Cut potatoes into bite size pieces and boil or put in your steamer cook until tender
3) Mince onion and brown in a little olive oil
4) Combine all ingredients and simmer until thoroughly combined and heated
5) Season with salt and pepper to taste
6) Garnish with a little chopped green onion or parsley and serve with a nice chunk of Artisan or French bread

Jim's Wine Pairing Suggestion:
Jim recommends a glass of SOE Red or Zinzabar to go with this warm winter meal
